It's almost the weekend (hi short week & being in Buffalo tomorrow!) and if I could insert an emoji that perfectly depicts my current vibe, it'd definitely be the dancing salsa lady. She seems fun. I like her.
Side note: I'm listening to the Throwback Thursday playlist on Spotify and the Spice Girls are playing right now. Maybe that's why I picked the spicy salsa dancer? I digress.
If you're into grilling out and know how to use a knife to chop some veggies, then this recipe is for you. I will say, the first time I used my dads grill I was accused of ruining the knobs (it was actually not my fault), but that's another story. This recipe has been a favorite in my house because 1) it's super easy to recreate 2) there's no dishes - well not really.
Give it a little whirl. Ps. I totally forgot to take an ending pic. That's going to be my excuse for making this again this weekend.
Potato (Sweet potatoes are amazing, as well)
Onion
Zucchini squash
Yellow squash
Tomatoes
Spicy peppers
Mozzarella cheese, shredded
Salt + pepper
Tip: Use as much veggies as you possibly want. Load the thing up - it's so delicious!
Directions:
On a baking sheet, add a layer of aluminum foil.
Cut veggies.
Start with potatoes on bottom layer. Add salt and pepper. Sprinkle cheese.
Continue to layer veggies with layer of salt and pepper and mozzarella.
Repeat until all vegetables are used.
Take piece of aluminum foil and seal well.
Add to grill for about 15 minutes.
